Gourmet Grapefruit Gazpacho
This gazpacho recipe is so good! It is a bit of a departure from the cool and smooth gazpacho that is popping up this time of year. This recipe has chunks of vegetables and a little heat. I like to serve chopped avocado on top for more color and to provide an ingredient that has a smooth flavor to contrast the acidity of the tomatoes and citrus in the soup. This dish also presents beautifully and looks inviting on a hot summer day. Enjoy!
Ingredients:
- 1 grapefruit, sectioned
- 2 oranges, sectioned
- 1 cup tomato, chopped
- 1/2 cup green bell pepper, chopped
- 1/4 cup cucumber, peeled and chopped
- 1/2 cup tomatillo, chopped
- 2 tbsp purple onion, chopped
- 2 tbsp fresh cilantro, chopped
- 2 cloves garlic, minced
- 1/2 cup tomato juice
- 1/4 cup vegetable broth
- 2 tbsp lime juice
- 1 tsp Tabasco sauce
- salt and pepper to taste
Preparation:
Coarsely chop grapefruit and orange sections and place in a large bowl.
Add remaining ingredients and chill for at least four hours.
Serve chilled.
Makes four servings.
