Easy Southwestern Salad

 

Healthy, easy to put together, and delicious. This salad is a great take to work lunch and will also pack well on a hike.  High in complex carbohydrates, protein, and antioxidants, this salad will provide you the right fuel to get you through your day. 

Ingredients

  • 3 cups frozen corn, thawed
  • 1 15 ounce can low sodium pinto beans drained and rinsed 
  • 1 15 ounce can low sodium black beans drained and rinsed 
  • 1 red bell pepper chopped
  • 1/4 cup diced red onion
  • 3 limes juiced
  • 3 tablespoons rice vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 tablespoon chili powder
  • 3 chopped fresh cilantro
  • 2 cloves garlic minced
  • ¼ cup pepitas



 
 
Instructions

Mix all ingredients until combined. 

Sprinkle the top with pepitas.
