Easy Southwestern Salad
Healthy, easy to put together, and delicious. This salad is a great take to work lunch and will also pack well on a hike. High in complex carbohydrates, protein, and antioxidants, this salad will provide you the right fuel to get you through your day.
Ingredients
- 3 cups frozen corn, thawed
- 1 15 ounce can low sodium pinto beans drained and rinsed
- 1 15 ounce can low sodium black beans drained and rinsed
- 1 red bell pepper chopped
- 1/4 cup diced red onion
- 3 limes juiced
- 3 tablespoons rice vinegar
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1 tablespoon chili powder
- 3 chopped fresh cilantro
- 2 cloves garlic minced
- ¼ cup pepitas
Instructions
Mix all ingredients until combined.
Sprinkle the top with pepitas.
