Creamy Spring Vegetable Chickpea Curry
I got lots of great feedback when I posted this photo on Instagram, it is a beautiful dish! This recipe comes from Alexis from Hummusapien. I share lots of her recipes and many of them end up in my regular rotation. This dish is loaded with lots of beautiful vegetables and the curry is easy to make. I served this dish over black rice but any rice will work just fine.
